I think it really varies between actors. Some actors seem to just play themselves, i think Robert DiNiro is often like this. Then you have characters like Alec Guinness, Marlon Brando, or Ben Kingsley. There are so many styles.
How do they do it, you ask?
Well, yest there is innate talent or at least some predisposition to this sort of activity. Then there is training. In movies, these actors work with directors and others who help to suspend reality and disbelief, and create and environment where they can do this work. Plus, they can do as many takes as needed and have the final product fully edited. So its not just the one performance by the one actor.
