Have to agree about the solo in Sympathy PBU, my fave in a Stones song also, and it may be the second greatest guitar solo of all time.
I find it kind of hard to say who outshone who on guitar on a record, playing wise. I think it's almost inevitable if you have two guitarists there will be an element of competition. A good producer you would think, will use that to the benefit of the overall sound recorded, so that what you hear is everyone playing at their best, it's collaborative. An inspirational solo won't sound so great if the playing behind it isn't solid. Although in a live performance it might be easier to pick out the guitarist who is shining on any particular performance, you can take it that if the rhythm section are having a shite night, everyone's having a shite night etc
