I don't think there can be only one "definitive" book on a band that has been around for more than 50 years. Such a book would be as thick as the New York phone book.
My first recommendation would be Bill Wyman's "Stone Alone". That would be the best introduction to the Rolling Stones band, seen with the eyes of an insider.
Of course after finishing the book, that "someone who (was) going to read one, and only one, book on the Stones" is going to want to read more. My next suggestions would be Stanley Booth's "The True Adventures of the Rolling Stones", Tony Sanchez's "Up and Down with the Rolling Stones", James Phelge's "Nankering with the Rolling Stones" and Keno's "Rolling Through the Stones". Victor Bockris' Keith bio and, of course, the new Brian bio by Paul Trynka are also good reads.
