I am not saying that Brian Jones's parts were necessarily 'simple', some were, for example, The Last Time, it's just a recurring hook of a few notes. However it is effective in the overall piece of music, and possibly the most memorable part.
As far as people only choosing to call Jones' music simple, I don't know how accurate that is or not, I really can't. I can only say if it is the case then it might be because some people try to make Jones' music out to be something more than it actually is, and there really is no need to do that, the music can speak for itself.However, I really don't know.
There is an large element of truth in what you say DA, we all know about 'my little three chord wonders'. Of course as you well know, no matter how simple or complex it gets, rock/pop is as powerful as any other form of music in speaking to you and producing an emotional reaction. Funny thing, I believe bluegrass is the music that produces the most brain activity, while classical will temporarily increase your I.Q.....must remember to listen to more of that.
