I think everything you've said is spot on. Keith certainly influenced the direction of the band greatly from 1968 forward. He apparently regrets not having played a larger role in shaping their sound to the extent that Mick and Brian did before that time, and therefore pushes the revisionist crap, something that is accepted as fact by those who don't know any better. Implying that Stu was the one who originated the Stones should indeed be cause for suspicion, and also gives me a reason to discount just about everything Keith might have to say about Brian, or Bill for that matter. As far as the Anita thing goes, I don't begrudge Keith "stealing" her from Brian and would not expect him to have to make any excuses for doing so, as dysfunctional and volatile relationships are almost always doomed to failure. Opportunists abound under those circumstances, and if not Keith it would have been someone else. On the other hand it certainly had an impact of changing the dynamic of the Stones, further removing Brian from what was once a pivotal role to a marginal one.
