In no particular order:
Fancyman Blues - Amazing harmonica by Jagger.
Down In The Hole - Sugar Blue's harmonica is featured on this electric blues tune with Jagger singing bitter 'Like A Rolling Stone' type lyrics.
CYHMK - Don't think it's underrated? I consider it easily in the Stones Top 20. (It's Top Ten for me.) and it has been included on ZERO Stones Best Of, or Greatest Hits, packages all these years! Didn't even make the GRR! 4 Discer with 80 tracks. That alone makes it underrated.
Jump On Top Of Me - I don't think the lyrics were ever really completed, but man turn it up loud and it gets me going every time.
Child Of The Moon - I love the hook and the sound of that guitar. How did it not make TSMR ?
