The Sex Pistols - Never Mind the Bollocks. This just changed everything. I didn't understand why some people utterly hated them, and had what I considered at that time to be "good taste." That's when I found out that a lot of them didn't even listen to it.
I hated it. And I did listen to it. A lot! But not by choice. My sister had the album and I swear to god, she was spinning that thing one hundred times a day, every single day. I found the song "Pretty Vacant" listenable but I thought the rest of the album was just a wall of noise. But then, she had a crappy little stereo system. I haven't heard that album since I moved out of my parents' house. I wonder what I would think of it today.
While Sis was Sex Pistol-ing, I was heavily into The Doors. So I guess that any of their albums could be seen as "defining" me. Add to that Pink Floyd's "Wish You Were Here", which was the soundtrack to part of my teen years.
