I'm going to take the reverse approach here, and say that the Stones should have released a couple more double albums than they did. First, though, Satanic Majesties and Undercover are great albums that stand on their own...no real weaknesses IMO.

For double albums, clearly Some Girls should have been a double, and in fact it eventually was I guess. I also think--having just mentioned Undercover ha ha!--that Emotional Rescue/Undercover could have been a double as well. I've come to realize the beauty of the "sessional period" almost moreso than the eventual releases that come from them when it comes to musical creativity, and not just for the Stones. Lots of bands have bursts of really good sessions, but don't always polish things up the right way for release (see the Beatle's White Album and Radiohead's Kid A/Amnesiac). When things are clicking, as they were in Paris during the Some Girls sessions, or in Nellcote, a lot of superb-quality output is often the result and there is no reason to cull it down. The Chess sessions demonstrate this as well, as there are many still-unofficially-released gems that could have gone into the albums of the time or a really amazing fantasy double-album-release. Sure, great albums can come from patchwork recording situations in different studios (Sticky Fingers, Led Zep II), but a great sessional period can often yield utter magic.

But enough of that. Back to weaker works from the Stones. For me, I've really got to say that the only weak thing they've ever done is Dirty Work, and even that one has a few good ones. In the context of rock and roll as a whole, and in the context of their own high standards, DW is the only one that was a misstep and probably shouldn't have been released (at least the way it was). Of course, there are a handful of Stones albums that I don't listen to all that often, but when I really think about 'weakness' that's the only one that qualifies.
