I remember seeing a special on tv one time on what makes music appealing to the average person, which was basically music you can anticipate. When you can anticipate the next note or chord change because it follows the likely pattern, then ends or returns to the root note (think of all the songs that you like right away and seem to know when the drum beat will change and you can feel the chord change coming, or a whew). The I IV V chord pattern and its variations are used to no end with great success because of this. Paint it Black is the perfect example of this: on one hand its so simple and the explanation of how the band kind of treated it as a goofy track while jamming it out makes it seem like joke, but on the other hand, it follows such a likely path that it makes sense and is appealing. The band really pulled together to make what seemed like a throwaway track and made it something special and Jagger really puts the icing and cherry on top with an amazing vocal.
