I agree on overdubbing guitars onto a live album - definitely a bit shady. For me, there's quite a lot of magic that happens on the live boots. Needless to say, it all comes down to personal preference.
I had a similar experience to yours with regard to feelings about McCartney. In the end, I decided that it made no sense to be irritated about something I wasn't around for. He's probably all around good person, but fame puts you in situations in which your flaws or shortcomings do potentially become more exposed and enhanced by the power and influence you wield. Even typical passive aggressiveness can become something disastrous.
