Yes, it's an old story, but not a bad one, either. The fiddle was the very last instrument recorded for the song - 9 months after the Stones first started working on it. After being asked to do so by the Stones, Byron Berline plays his fiddle outside of the studio - out in the street, while Hollywood's street-life and traffic passed by and all of that was picked up for the track. The car horn we hear was the Stones tour mamager, Sam Cutler, who beeped at just the right time. Cutler's voice is well known by old fans (and you can hear him on film) as the guy who first started to introduce the band on stage in 1969 as "the greatest rock 'n roll band in the world... The Rolling Stones!!!".
